I am here to show you the process on my tomatoes and tomatillos As you can see they have grown huge already. The tomatoes are on the right and the tomatillos on the left. The tomatoes are bursting out of their tomato cages. Next year I need to try a Florida weave for my tomatoes as these cages are just too small for indeterminate types and do not work well. If you look closely you can see a couple of the beefsteak tomatoes started. The sweet million and midnight snack have a couple of tiny fruit started and some flowers but not much action on that front yet. </p><p style="text-align: center;">On the right is my tomatillo plants. These grew quickly as well and have set a bunch of fruit already. There of the 4 of these plants are showing some distress but still setting flowers and fruit. They have some leaves which are yellowing and curling. I'm not sure what the issue is, it seems to happen most on the upper leaves and the lower leaves seem healthy. These are very similar to a Chinese lantern flower and are so special looking. Once the husk is formed then the fruit starts its life inside the protective husk. Apparently they are ready to harvest when they start bursting out of the husk and the husk starts drying. The patience required for a garden is hard but I am enjoying the process. I think part of the reason the peppers are going slowly is because of the cold snap they faced after planting. In this first picture (left to right) are rows of zinnias that I started from seed and transplanted into the rows that the carrots and parsnip failed seeds were in. As you can see there are a couple flowers already on these - so pretty. Next is the bell peppers, California wonder in the front and snack pepper in the back. I picked up some celosia and other plants at the grocery for 50 cents each - score! The mad hatter pepper plant (centre back) is the largest currently. On the left is two ring of fire cayenne peppers and a single jalapeño plant (which already has fruit - I missed clipping the flowers off of these early to promote bigger plant growth first). As you can see they are very slow to grow. This is sad as these are my favourite type of pepper. I'm hopeful they will pick up soon. I have also moved two of the four habanero plants to containers. They seem to be doing a much better. On the right of the photo are my super hots. The front is the ghost pepper and the back is the armageddon. This area is very sandy and dry so the partial raised bed will help retain the soil and water for the plants. As you can see in the before it was mostly weeds :(. The hosts was split off the giant plant we have growing in the backyard beside the air conditioner. The carnations came back great! They are a nice mound to white flowers. The hosts is also doing great - super green and large. I think I will have to split it this fall already to keep it from getting as large as the one in the backyard. The Lillies are also back. I added a hanging basket from the grocery store and moved my hibiscus outside again. I added a pair of Black Eyed Susan vine starters at the back in hopes that it grows up the railing. The flowers on these vines are a glorious bright orange with a dark centre at first and fade to more of a yellow. As you can see the black eyed Susan vine is growing up as planned and I can't wait for it to really start to cover the railing. The hanging baskets are doing beautifully adding so much colour. I usually have hibiscus flowers by now but I had something eating the buds. I have picked and disposed of all the buds and hope I've got the all the culprits. The plant itself is looking very healthy. The Black Eyed Susan's are progressing nicely still. The hanging basket is still doing ok. The petunias are starting to dwindle but the supercells are very prolific. And I really like the lantana flowers. They produce multiple tiny little flowers in an umbrella shaped clump. And I've got some beautiful yellow day Lillies. Having a full garden has been difficult living between 2 provinces but this year I got one in and I'm so glad. I really find gardening relaxing and it gives me a purpose each morning which is great to get me up and going. I've even become a morning person, which I never thought would happen. While working I would wake up early to do a garden walk and water then do a quick workout before I would start work (teaching remotely from home helped as I didn't have any commute time - though I missed my morning bike rides). </p><p>To start I had to weed the garden - I have a very bad bindweed problem. I wish I had dug out the raised beds and put landscaping fabric below the soil but I only put it on top. Then I went shopping for some seedlings and go planting! I also had the window frame box that was filled with weeds but I could not move that on my own, so it had to wait till I had some help.</p><p>So, let's get to what I have growing!!! As always I focused on tomatoes and peppers. The peppers flow from sweet to extreme heat -fun! The no heat varieties are mini sweet, and California wonder bell peppers. Then I'm trying shishito peppers - I'd never heard of these but after buying the plants I saw them everywhere this spring. Apparently they are a fad right now for appetizers in chic restaurants. Then I'm also trying mad hatter peppers this year they are supposed to be a fun shape and not really any heat. The Bangkok peppers are a typical Thai pepper that will have fruit that grow vertically up on the plant. Ring of fire peppers will be my cayenne variety for the year and are supposed to be hotter than most cayennes. Then my favourite peppers - habaneros! These ones where just labelled as habanero so I don't know what variety they are unfortunately. I planted four in a row but moved 2 to containers shortly after to give more space. Then I've got two superhots - ghost peppers and armageddon. Im hoping to make hot sauce and marinade for some jerky with these. The armageddon is supposed to be a slow sweet heat and the ghost is more of a instant dry heat. For the tomatoes I planted two snacking varieties - midnight snack (which is an indigo cherry tomato - which means the fruit starts green then turns to almost black then to red) and sweet million (a prolific fruiting cherry tomato). This is three weeks after planting and you can see the tomatoes are growing but the peppers haven't really started yet. The old growth mulch on the right is covering a couple rows of carrots and parsnip seeds from the squirrels. Sadly I don't think it worked as I didn't have any come up :(. I do not call these new years resolutions, because that terms just seems jinxed. These are goals for myself that I hope to accomplish this year. Last year GMF and I said no fast food burger joints in 2013 and I only cheated once on halloween (I was dressed up like the Hamburglar, I needed to eat a McDonald's burger).<br />
<br />
This year I am challenging myself with a couple more goals and I'm hoping that by documenting them on the internet for all to see it will give me more motivation to succeed. Most of these goals are to work towards a healthier lifestyle. When I'm home in the summer I do really well because I have my garden but I need to focus on the rest of the year.</div>

First taking an idea from Modern Family: Jay set a goal of using his elliptical machine for a distance that equated to reaching the Canada boarder by the next Christmas. I am setting a goal of biking a distance which is equivalent to going around lake ontario from my house and back. This is a distance of 1128 km. I wish to reach this goal by the end of 2014. Biking to work is 4.5 km's so if I do this more often this should be an accomplishable goal. </div>

Second is limiting my pop intake to 2 a month. I have always drank way too much pop and in the past I have tried giving it up during the week with some success. I'm hoping this will lead to healthier beverage choices (drink more water!).</div>

Third: bring more lunches to work. I am often sneaking out to Tim Hortons and grabbing a bagel for lunch or something. I need to be more organized with my meal planning so that I always have something that I can bring for lunches. </div>

Fourth: set a realistic cleaning schedule and stick with it. I have never been able to keep a clean room let alone a clean house. In 2014 I would love to improve on this. I think the key here is to be realistic, I'm not going to become Ms. Holly Homemaker just stop being Ms. Molly Messmaker.<br />

Fifth: stay in touch more with family and friends. You see I hate talking on the phone (I actually get kinda anxious about it - don't ask why I have no idea, it just feels so awkward). I need to make a better effort to Skype with my parents, brothers, nieces and nephews. The kids grow up so fast, and I don't get to see them in person as much as I would like. I will Skype with both my brothers and their family at least once a month and my parents once a week. And call my grandmother at least once a month. <br />

This year I wanted to share some homemade gifts with people for christmas. I think homemade gifts are so much more personal. I also love edible gifts, because lets face it most of us have enough things and many gifts sit in a closet somewhere never to be worn or used. </div>

The idea came from the plethora of hot peppers I grew this year. I planted so many hot peppers knowing I wanted to make hot sauce, but I didn't realize just how much hot sauce I'd be able to make with that many peppers. After making the first batch and seeing how far a handful of peppers went I knew I would have more than I could ever need. So I decided that I would give nice hot sauce bottles away for presents. This hot sauce is a sweet habenero hot sauce. It's not too spicy so its great for coating chicken strips or wings in (yum!). I also dried many of the cayenne peppers and made my own chill powder and crushed chili flakes. The crushed chili flakes are in the jar near my finger in the picture (doh!) inside the jar is also a tiny ziplock with the chili powder. I have been using the chili powder like crazy, adding extra heat to almost everything I make; pasta, chili, chicken, soup, etc.</div>

GMF and I also started brewing our own beer in 2013 so we wanted to share this others. In the gift package was one of each of our batches - A cream ale (our first beer, and my go to), a raspberry wheat, a apricot wheat, and an extra special bitter (ESB). I created labels for the beers with just my printer and some avery labels (won't hold up to a cooler full of ice, but does the trick in a pinch). I also covered the 6 pack box in decoupaged craft paper and a printed label. I've named our brewery compass Brewing company for now but we are still looking for a permanent name. What do you think of compass Brewing co? </div>

Here is what I harvested this week. I made a gift basket of veg and herbs for a friend that often gives me rides to our Ultimate games. I play Ultimate (frisbee) regularly, if you've never heard of this sport you should check it out is a great combination of football, basketball and soccer strategies. It is excellent exercise and fun for all skill levels. Back to the harvest: I harvested some lettuce regularly for salads, herbs such as basil, parsley and oregano was given away to friends. I'm still picking cucumbers which is awesome!! There are still several egg plants also (I gave this one away to another Ultimate friend and he made eggplant parmesan with it and said his kids loved it!). There are still lots of leeks in the garden as well varying in size, this one was a big one. And hot peppers, oh my I feel like I'm over run with hot peppers. I have been giving these away to work and ultimate friends.<br />

This was probably the most exciting harvest of the week, my first parsnip ever! I was making Chicken pot pie and needed a parsnip<a href="http://liveintheyard.blogspot.ca/2013/10/chicken-pot-pie-with-twist.html" target="_blank"> - check my post about that recipe.</a> So out we went to harvest one. We were going to leave them all till after the frost but when a recipe calls for parsnip you pick parsnips! <br />
I went to pull on the green tops like I do to pull up carrots, but the tops just popped off the root. So I dug to the root and was shocked to see how big it was. It was over 2.5 inches in diameter. I tried to pull from the top of the root but it wouldn't come up that way either. We needed to dig all around to get this massive parsnip out of the ground. We did damage it a little trying to remove it but there was more than enough goodness left for what I needed. <br />

The grape tomato plant is the only one left as I removed my other two (health kick and ultra sweet) last week. This one still has several tomatoes but they need to be picked a little early or they are splitting on the vines. <br />

And more hot peppers!! Cherry bomb, habanero, and cayenne. I am not surprised by the number of cayennes or even the habaneros as they have been on the plant green for a while and just needed to turn colour. But the cherry bombs came out of the no where, we thought this plant was almost done about a month ago, but then all of a sudden it started producing many new fruit very quickly, more than it was making mid summer.<br />

<span style="font-family: Georgia, Times New Roman, serif; font-size: normal;">I love dishes like chicken pot pie, because they are so comforting. They use up whatever veg you have in the garden, or fridge. The recipes are easily changed and manipulated to suit your own tastes and it is easily froze for future consumption on a cold fall evening. As you can see in the picture my twist on this classic recipe is in the crust, instead of one of the two usual suspects (dough crust or dumplings) I use stove top stuffing. Trust me this is delicious and sooo easy. I don't need to mix batter to make this crust, I can just use left over stuffing from a chicken or turkey I have made or just whip up a box from the store. If you make it from homemade stuffing it is that much better, plus you probably have left over chicken or turkey to use as well. But I digress, and I had no left overs to use so on with the recipe. First I gathered together all the veg that I wanted to use. This included: Sweet potato, potatoes, turnip, carrots, parsnip, bell peppers, onion, and celery.</span></div>

I chopped up all the root veg first as it takes longer to cook. I put all this veg is a pot with some water and par-boiled it to give it a head start. While that was cooking I sliced up the celery, bell peppers and onions and sautéed them. Then GMF came in a said what about leeks, great idea, so he ran out to the garden and picked a couple small leeks to add. I also added about 3 cloves of crushed garlic to the sautéing veg. Note in the future I would do more leeks, celery and onions. The ratio of root veg to others was a little to high this time. Then I put everything together in a large pot and sprinkled with a couple tablespoons of flour and mixed in. For the stock I used chicken stalk - about 2 cups by eye (just enough to almost cover the veg) and a couple shots of vermouth (this gives it a great flavour) it will reduce and thicken with the flour. The main seasonings I used were salt, pepper and lots of sage. Oh and just as I did when I was cooking I almost forgot the chicken. I sliced up a couple chicken breasts and sautéed them with some oil and sage and added this to the mixture of vegetables.</div>

When the mixture was all combined and the sauce thickened I added it to individual sized ramekins, but you can make this in one large casserole pot and serve family style as well. Then I added the stove stop stuffing to the top and cooked in the oven on broil to crispen the stuffing. </div>

I've gotten much better over the years but there's still a lot I don't eat. Most of my pickiness is due to textures. I'm not a big fan of any skin on a fruit or veg, I almost always prefer the skin off (except for potatoes - I love the skins on potatoes, but even that I didn't like growing up). Tomatoes I can eat with the skins but I prefer not. So I was making salsa the other day and I decided I would peel my tomatoes to give a more uniform texture. I don't boil my tomatoes, thats too much work for me (because I'm impatient and a little lazy). I peel them much like some peel oranges or nectarines. I score the edges in slices. Then peel off the skin from each slice, they come off in sections very easily. <br />

What else is great about this way to peel a tomato is that is also makes it easy to deseed and separate all the flesh. If you've scored it deep enough it has created slices into the juicy part. Simply hold the tomato over a bowl and slowly squeeze. (unfortunately I didn't take pics of this but I will next time and I'll amend this post). The juice and the seeds will squeak through the cuts in the tomato. Then you can slice the tomato as you usually would and it will just be the flesh.<br />

I can't believe it's October already, probably because the weather here has been summer hot for the last week or so, 25-35 degrees most days. It's that time again where we get to show off our harvests from the previous week and look at what others are harvesting around the world over at <a href="http://daphnesdandelions.blogspot.ca/" target="_blank">Daphne's Dandelions.</a></div>

The harvests are definitely slowing, but I still got a good haul this week. I picked the last of the tomatoes as they were starting to split like crazy on the vines, so they will ripen inside. I've been making lots of fresh salsa (I love homemade salsa!). I've continued to pick hot peppers, and theres no end in site for these. I've got tons in the freezer and I'll dry some more. I also picked the last of the rainbow carrots. One of them was a big fatty and delicious as a snack. Also the fall radishes, only three out of the 6 created good fruit. They were tasty I think I'll try this variety again in the fall, now to find right packet of seeds to identify which variety they were. I'm also still harvesting leeks. Most of this week we saw summer temperatures, even at night. I was hot outside in shorts and a tee. But the weekend saw cooler fall temperatures and I decided it was time for some fall soup :). With my plethora of leeks and the large amount of potatoes we bought from the farmers market at couple weekends ago, I thought I would try to make leek and potato soup, inspired by a fellow blogger over at <a href="http://ourstoneyacres.com/creamy-leek-and-potato-soup?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed%3A+StoneyAcres+%28Stoney+Acres%29" target="_blank">Stoney Acres</a> who also posted a recipe for this earlier this week. </div>

The main ingredients of the soup where obviously the potato and the leek. But what made it different then others is the crunchy bacon and potato skin topping. As I was peeling the potatoes I decided I didn't just want to compost and waste these delicious bits of skin, so I thought I would try frying them to make crispy potato skin bits. (the chunks of potato I didn't use in this recipe). The potatoes for the soup were sliced about 1.5cm thick so they would cook fast. I boiled them in about 2 cups of chicken stock and used the emersion blender to create a creamy soup base.</div>

I sliced 4 strips of bacon into thin pieces and fried them in a fry pan. Trick to getting great crispy bacon bits that wont burn, start with a little water in the fry pan, just enough to almost cover the bacon. Cook the bacon on medium-high heat, as the bacon cooks the water boils away and then they fry in their own fat to crispen up at the very end (I saw this on an episode of Chef at Home with Michael Smith, he is one of my favourite TV chefs). After the bacon is done don't waste that great bacon grease, throw the potato skins in there and crispen them up (watch them carefully as it will happen fast). Then chop up a the leeks into about 1-2 cm slices and a couple cloves of garlic and fry that together in the left over bacon grease. </div>

Combine the leek and garlic with the potato soup and top with crispy bacon and potato bits. Serve with thin garlic bread. (<span style="text-align: center;">Note you could also puree the leeks with the potatoes for a smoother soup)</span></div>

I have been picking more tomatoes that we can eat fresh lately so I decided to make some salsa. I really enjoy a salsa with a smoky flavour so I grilled all the veg before blending it. I grilled Tomatoes (2 beefsteak tomatoes, and about 30 grape tomatoes), onion (about 4 large slices), garlic (3 cloves), one habenero, one cherry bomb pepper, and one yellow bell pepper. I blackened the peppers so that I could remove the skin. The onions and tomatoes I grilled till soft and the garlic I grilled till soft and removed the skin. Once everything was grilled and skinned I put it all in a blender with about 1/4 of lime juice, 1/2 cup of cilantro chopped, 1 tsp of coriander seeds, 1 tsp of zilitol (a sugar substitute) 1 tsp of salt and 1 tsp of pepper. I blended it up and then canned it. (Note this recipe was for a hot salsa because of the habenero you can adjust ingredients to match your spice level). <br />

My garden is winding down but there's still lots to do. For the next two weeks it's final harvesting and trimming. Then pulling out plants and readying the soil for next spring and planting some things to overwinter. </div>

There are still a couple of carrots. And I haven't harvested any of the parsnips yet, waiting till after a frost (I'm curious about how they'll turn out). Their stalks are much bigger than I would have thought. I imagined them to look much like a carrot top. </div>

There's still several eggplants on the plants. I have pinched off all remaining flowers so all the energy and nutrients will go into growing the current fruit. They have definitely slowed down. </div>

This weekend i competed in the provincial disc golf championship and finished third! I also got my first ace (equivalent to a hole in one in ball golf). So that was pretty exciting!!! <br />
But I manage red to get one good basket and a couple other things. I harvested some ultra sweet beefsteak tomatoes (they are so big a meeting and delicious) some more hot peppers, lettuce, an eggplant which I gave to a colleague, some beets, a couple carrots and a cucumber. </div><div style="text-align: justify;">I'm posting this weeks Grow it! Cook it! Eat it! Live it! early because I will be away tomorrow competing in the provincial championships of disc golf. Disc golf is another one of my hobbies, if you have not heard of the sport it is played similar to golf but with small discs instead of a ball and club. <a href="http://en.wikipedia.org/wiki/Disc_golf" target="_blank">Check out more info about it on the wiki.</a></div><br />

</div><div class="separator" style="clear: both; text-align: justify;">Ok so on with my recipe for this week. This week I made Thai beef salad. Its a great dish to make at the end of the week when you haven't shopped in a while and have odds and ends. GMF pulled out some beef tenderloin that had been frozen in Kobi beef marinade (often I make my own asian marinade with soya sauce, peanut butter, sesame oil, honey and salt and pepper). I sliced it really really thin with my ceramic knife (if you haven't tried ceramic knives yet you should I LOVE them!). I then sautéed the beef quickly in a little oil and sat off to the side. I then cut up whatever veg I have on hand (this time I picked a cherry bomb pepper, cayenne pepper, cajun bell pepper, some broccoli and a carrot from the garden and I had a yellow bell pepper and an onion in the fridge.) I sautéed these veg with a little soya sauce, sesame oil and salt and pepper. I also sautéed some been sprouts (GMF thinks its crazy that I like bean sprouts so much, but they are so yummy). I cooked up some chow mein noodles and then sauteed them with soya sauce, sesame oil, honey and salt and pepper. I then add the beef and all the veg and toss. Serve with some spinach leaves chopped, lots of cilantro and sesame seeds for garnish. Depending on your spice level you can add some chili garlic paste (I added my <a href="http://liveintheyard.blogspot.ca/2013/09/hot-sauce.html" target="_blank">homemade hot sauce</a>) and here is the finished product!</div><div class="separator" style="clear: both; text-align: center;"><br />

Won't be long before I have to take them all inside though for risk of frost. I've already pruned all the plants so all their energy goes into the fruit already formed instead of new growth (sad). <br />

GMF has been making some new creations. First he made kale pizza. He sautéed the kale in oil and garlic (kitchen smelled so tasty). Then put that on a naan brea with some I onions, peppers and cheese. And roasted them in the oven. I snuck a piece of the kale before pizza stage and it was delicious. He also made an eggplant dish. He topped roasted eggplant with marinara sauce cheese and a big tomato slice and broiled till the cheese melted. He made lots of these and had some for dinner and lunch the next day. I'm sure it would freeze well also. <br />
I also created something a tiny bit different in the dessert department (using nothing from the garden though). Chewy fudge brownies with peanut butter icing and score bits on top. Soo yummy. I made them on Saturday and planned to take half ino work to share. But oops we ate all of them (uh oh). I'll have to make them again sometime soon for work. <br />

This week we harvested our first red bell peppers. I don't think I'll grow full size bells again next year, they don't produce enough and take too long to ripen. I think I'll try mini bells. The grape tomatoes continue to produce enough for me to pick a good handful everyday for snacks and salads. Below are two of our weird shaped cayennes. They are normally long and skinny like the ones in the last photo. I thought it was cross pollination but apparently that doesn't produce two different types on the same plant. The cherry bomb peppers are still doing great. Ripening a couple a day or so. And the cajun bells (but I don't have a pic of my harvests of them). The cajun bells are great for snacking so I tend to pick one at a time for lunch veggies.</div>

This day was a good haul. I thought these would be some of the last cucumbers we'd get as there was no more fruit or flowers starting, but the day after I picked these there were tons of flowers on the plants! Also excited to still be getting little bits of broccoli on the one remaining plant. There is also the tiniest of habaneros on the left (the orange pepper - it went into a marinade). There is one lone carrot there that was delicious as a snack. Oh and a cajun bell, I guess I did get one in a shot.</div>

More peppers a pathetic white carrot and, the last of our snow peas. The snow didn't work out this year because the plant got hidden by the broccoli and brussel sprouts, but I will try them again next year.<br />

The moment has come. I have been so excited about making my own hot sauce since I planted my peppers in the spring. And now that I've made some I realized I could have done it a while ago because it doesn't take anywhere near as many hot peppers as I thought. I decided I wanted a depth of flavour to my hot sauce so I would use some bell pepper, onion and garlic as well. I chopped up 1 yellow bell pepper, 1 cajun bell, 1/3 of a large spanish onion, 1 habanero (seeds removed), about 12 cayenne peppers and crushed 6 garlic cloves. I sautéed all of this in the wok until soft. (Important hint - make sure the vent fan is running at full whack or you start to breath in too much hot pepper fumes).</div>

For the liquid I used 1/4 cup of water, 1/4 cup of white vinegar and 1/8 cup of sugar (this liquid was left over after making my quick pickled peppers). I blended the sautéed mixture and the liquid using the liquifying mode on my blender. After a quick taste I was blown away at the heat, a little too much for us. So I added 1 jar of roasted red peppers (I know a cheat but I had it on hand). Then blended some more. This made it taste delicious, still very spicy and also flavourful. I then strained this liquid into a small pan (to remove the cayenne seeds and any skins that didn't get broken up). The sauce then simmered and reduce to about 1/3-1/4 of its original volume to thicken it. I poured the sauce into a decorative olive oil jar that I had on hand and put the rest in a mason jar to cool. I will freeze the amount in the mason jar for later. I couldn't believe that I only used a dozen cayenne peppers. I have hundreds on the plants as seen in the picture below of the finished product! </div>

Last night was a beautiful night for a fire here. The temperature was a round 15 degrees Celsius at first it was clear skies so you could see the stars (well the ones you can see in the city, which in London is actually quite a few). We decided we would have a fire and make grill-a-snacks. We went to the store and bought all the stuff we needed to make pizza ones like we normally do. As GMF was preparing the fire outside I was rummaging through the fridge getting out some veg that we could add to them. Then I saw a lovely looking chicken breast that I had cooked earlier and I suddenly had a craving for Fajitas. So I decided to try something different - Fajita filling in the pie iron. I have never tried to make anything in the pie iron without a crust before. I've used different things for the crust including puff pastry but never without any crust. </div>

I cut up the chicken breast, bell peppers, cherry bomb peppers, a cayenne pepper and some onion. Added in some seasoning - cracked salt and pepper, paprika, garlic and tossed this in some oil. Then I prepared my toppings. I made a simple pico de gallo salsa with grape tomatoes (which I picked in the dark so there are a couple in there that weren't as red as I'd like but oh well), onion, cilantro and lime juice. The other toppings were sour cream, and a smokey chipotle salsa. This was such a success and I think we will bring this recipe camping with us next time! The one thing we wish we did was put our cast iron fajita pan on the stones around the fire and then put the cooked filling on it to keep warm. We put it in a bowl that was sitting on a table beside the fire and so it lost some of its heat.<br />

On to dessert! I once again created by dessert grill-a-snack but with a couple minor changes. First the bread, instead of buying a loaf of the bagged bread we bought a fresh bakery loaf that had been sliced from the grocery store (it was actually cheaper as well). I didn't think it would make a difference, but it did. It was easier to spread the butter on the outside without tearing, it fit better in the pie iron and when we burned a little bit while cooking we could scrape it off very easily (the bagged bread would always fall apart). I know you're thinking, <i>how could you burn them!,</i> but it happens sometimes, and I deal with it! The second change was that I didn't put peanut butter on this one but instead I put score bits. OH MY GOODNESS, soooooo good. I had bought them to make score bit brownies today (I'll post about that later), so I decided why not add some to this. I also lightly salted the outside of the bread. Salt and caramel go together so well! This was delicious!!</div>

Then flatten the boneless skinless chicken breast. You can butterfly and then pound if they are thick breasts or just pound. Put the marinade and the chicken in a ziplock and let marinate on the counter for 20-30 minutes. This will not only flavour the chicken but also allow it to come to room temperature. (If you are going to marinate it for any longer put in fridge obviously).</div>

While it is marinating prepare your salad. In mine there are grape tomatoes, Cajun bell peppers, baby lettuces, radish leaves, cucumber, pickled banana peppers, and pickled beets. Experiment with whatever is fresh! Here are the ingredients picked fresh from the garden.</div>

The dressing is so easy and was a result of finishing my jar of beets. There was all that beer juice and I was likely not make this into a dressing. So I whisked it with olive oil and a little salt and pepper. Wait to dress salad until right before serving.</div>

After the chicken has marinated grill it on medium-high heat for about 4-6 minutes per side. (Since it is thin you may want to oil your grill to prevent sticking, just use a cotton cloth with oil on it and carefully rub directly onto the hot grill.) Do not over cook the chicken once it is no longer pink its good to go. I served it with some rosemary focaccia garlic bread that I grilled.</div>
